CAT5 is rated to 100Mhz,  and is okay for data rates up at Fast Ethernet
Speeds
CAT5e is rated to 350Mz, and is okay for data far beyond this, up to
Gigabit
Ethernet.

The copper is more tightly twisted, and the cables themselves tend to be
more "robust"

of course, most CAT5 plant will work just fine for CAT5e usage, just not
over any great distance.
