Consider using the Texas Instruments 1 wire bus - Maplins do a starter
kit that comes with the PC interface board and a few different types of
sensor. I think the kit is around the =A350 mark, and the individual
temperature sensors are less than a =A35 each. I think the sensors =
return
an actual temperature value, so you don't have to worry about
compensating for resistance over long runs of cable etc.

The kit was on my Christmas list but Santa forgot to bring it...
