Your best answer, if you have once-only access underfloor, is to install
some suitable empty trunking or conduit along with your expected cable
needs. It will cost a little more than getting the cables all correct, but
a lot less than missing something that you need later...

Cat-5 seems to be usable for most things. Don't forget co-ax if you want
to distribute UHF tv, mains T&E is fine for speakers, as long as you
don't
mix the mains and speaker wiring up at a later date, and don't forget the
trunking, preferably with draw-wires and lots of access points.
