Just a thought:

Have you considered making the units themselves modular?  In the past,
when I have needed to do something similar, I have used mini-xlr's from
switchcraft... Put 4 mini-xlr board mounted sockets recessed about .125
inch from the edge of the case.

Then you could make more money selling adapters that have mini-xlr male
on one end, and phono (or DIN or scart or whatever someone else needs)
on the other end... And a consumer would only need to buy new adapters
to convert an RGB+SPDIF unit to a left-right-left-right or
composite+spdif or whatever.

Of course, it only becomes fully modular if you then have switchable
termination and video amps on each pair, s0 I guess I'm just spouting
gibberish...

The Audio channels arent really suited to carrying SPDIF but a 4 channel
Video set can be used for RGBS or Component+SPDIF or S-Video+SPDIF etc.
