Neil,

regarding inexpensive playback, I suggest any of the Popcorn Hour
like machines. Fairly inexpensive, and perfect for playing back
network based directory structures of DVDs.

AnyDVD (or DVD43.com), and copy the stuff to a central location,
share the location, point the Popcorn Hour player to that location, done.

You will need between 3GB and 8GB of space, when copying over the
whole DVD (what I suggest). There tools out there, that will strip
off unwanted audio tracks, and unwanted video parts off a DVD, but I
don't use those. HDD are cheap these days (7 to 13ct per GB for 1TB
to 2TB range).
