You could use 1-wire sensors, either with something like the TEMP08 or
T.O.M.10 boards, or directly connected to a pc via a serial port adapter.

OWW can do the logging for a the latter.

I use a perl script with my TOM10, and log using RRD (which can produce
some pretty graphs with the data).

Xap and Xpl work with some of those 1-wire boards as well IIRC.
