CAT5 patch panels / CAT5 terminating

I have completed most of my wiring, but I need to make a slight
adjustment to my wiring.

At the moment all rooms in the house are fed through to the loft and then
down to my server cupboard where
my RJ45 CAT5 patch panel is.

I want to change this configuration slightly.... I want to terminate all my
cables from each room up in the attic
and then feed down into the server cupboard on another set of cables.

Will I have any problems using 2 terminations in one run of cable?

Also... In my loft I dont want a RJ45 patch panel but just a simple closed
off white
box where I can join the two sets of cables. What would I be looking for to
do this?
