I'm a fan of drivesnapshot.com

It can snapshot your drive from Windows while you continue to use it.
Restores can then be done from Windows or DOS, but I guess in your case you
will just stick the drive into the PC.

I've used it with loads of USB drives, have done backups to/from network,
and
it's never let me down.
