I would imagine the only time you *need* more Ip addresses is if you..

Want to run something that just doesn't agree with NAT - Someone mentioned
SIP ?
You want to run multiple identical services off different IP addresses -
i.e. Web access to mutiple boxes and you cant change server port or do
something fancy with proxies/host-headers etc etc....
