Not quite; dimmable HMI does exist in products, especially for film
studio work, but not over a 0-100% range.  Heres a fibre optic source.

I have a (somewhat old) Osram catalogue that describes HMI lamps, and
it does specify that these lamps are dimmable.  And a quick blast
round the osram web site does concur with this.  But I have never
seen a stand-alone HMI dimmer.  Most HMI dimming is done
mechanically...
