This is normal, even professional RGB monitors won't have colour
adjustment.
The colour adjustment affects chroma or saturation. This can easily be done
on a composite or S-Video signal before it is converted to rgb to drive the
picture.
An rgb signal drives the picture directly and so it is not possible to
adjust the saturation without rematrixing the signal. There will be
individual rgb adjustments, but these may not be so accessible.
