Eco Tourism in Portugal

I have been lurking for some months now, enough time to see there are some
experts posting to this board.

We are developing an Eco Tourism establishment with concepts such as
Passive Architecture, Renewable Energy, Solar Heating, Habitat
development,Water & Waste Recycling and the use of IP Technology.

The proposed uses of IP Technology are listed below.

Does any body have any suggestions of suitable Hardware and Software that
can be applied to our proposed uses, to prevent us reinventing the wheel.

Use 1: VSAT to provide a centralised dual direction Broadband link
(Proposed supplier: Gilat)
Use 2: Individual server for each duplex apartment to provide services such
as VoIP telephone, Internet, Apartment Controls (HVAC,lights, security
etc.), Video & TV , Video live source in a selection of exterior
cameras around the estate (situated near Habitats for example), and 
Hostelry services.
Use 3: Use of Tablet PC (wireless) with programmed web pages to select each
of these services.
Use 4: Exterior network to be cabled from central router to individual
duplex apartments, providing  VSAT Broadband.

Quite an ambitious project, so any assistance will gratefully accepted
