The problem is thickness. I'll run not only speaker cables, but microphone, IR tx, IR rx, PIR and possibly door contacts all in single go. So where all those cables join, It will be very thick. If I go for one instead of two, I am saving bunch of 7 cables, which can be very thick at the end.

For the sake of a few quid, I'd definately run a pair of cables to
each speaker location and coil up the unused one (long enough to
reach wherever you could put an additional speaker). Depends on how
easy the cable running is though - if it's easy to run additional
cable in the future, you might not want to bother now and save the
few pounds.

I can't see any reason for running more than 2 cables.
