To be honest if the speakers are in the ceiling you ain’t going to get much of a soundstage, so you may as well just combine the left and right channels into a single channel and flood the area.

For the sake of a few quid, I'd definately run a pair of cables to
each speaker location and coil up the unused one (long enough to
reach wherever you could put an additional speaker). Depends on how
easy the cable running is though - if it's easy to run additional
cable in the future, you might not want to bother now and save the
few pounds.

I can't see any reason for running more than 2 cables.
