CAT5 cable ought to work for MIDI.
I played around with MIDI a bit when I was at UNI but that was a long time
ago. I have a feeling it is basically opto-isolated serial data. Make sure
you use one pair for TX (signal and return) and another pair for RX (signal
and return) and it should be fine. Cat 5 cable is of far superior quality
to
anything I ever used for MIDI and the MIDI interface suits twisted pairs
well.
