Rabbit plus multi-drop serial (e.g. RS435) is one answer - one rabbit
would give n displays a network interface. The real challenge here
isn't so much in the hardware but in the software interfacing with a
diverse range of applications, and then in zoning the displayed items
appropriately.
PS. The display also needs remote control of the display brightness
(e.g. for use in bedrooms).
