I have used these people a few times for different rack mount solutions,

These may possibly help you ;
  ACM432 - 4U, ATX, 8 exposed 5.25 bays
  or ACM30m is similar to 432 but 5U

They also do a hot swap IDE caddy,  I have never used ;

caddies, which I haven't used ;

I would just add, don't forget about cooling, airflow and PSU spec :)
