Hi Patrick,
There is a chance that the pitch is 2mm as this is what is used on the
larger Rabbit board that I looked at before. This is also a standard that a
few manufacturers are using. It should be the same pitch as the laptop
harddrive cables and if so, then is definitely 2mm.
If you want, I could easily knock up a PCB for your design if you give me
some more details. You could then use the file I produce to send to
PCB-Pool
and get a few prototypes for about 25 quid (min size is 100mm x 100mm but
you can be smaller and just order more to fit the min size, like for a
board
25mm x 50mm you can get 8 off boards made for your 25 quid or so.

PS.. just check the ZWorld website and the pin pitch is confirmed to be
2mm.
I have downloaded the datasheet and manual too, to check it out.

Yes on all counts!
The underside of the rabbit core has 2 connectors, male pins. Each of
these connectors has a total 2*13 pins arranged as two rows on the
same pitch as an IDC ribbon cable connector (like the kind used to
connect a hard-drive, but less wide). I only actually use 6 of the
pins in total on these connectors. If it helps, I could do a short
term loan of a core? I tried using Eagle CAD (I think it was) to do
the layout, but couldn't find the connector in the library, and
couldn't seem to get the pitch right 'by hand'.
