John,
Can you provide a URL for RCM2200? Does the device include a built in
ethernet interface or tcp/ip stack?

As a starter project, how about Andy's suggestion of an ethernet
driven LCD interface with either 5 push button inputs (allows for
cursor navigation plus select) or rotary selector plus enter button?

This would be a universally useful unit, and there are plenty of
options for refinement on the software and hardware sides (e.g.
telnet emulators, http browsing, support for large bit mapped
screens, touch sensitive overlays, local analogue interface & display
(for thermostat type applications) etc.etc) but in its simplest form -
say 2 line x 16 character display with 5 pbs - should be easy to
design, implement and debug. The core code & hardware (ethernet &
tcp/ip) will be valuable building blocks for more ambitious units
down the line.
