I used unscreened CAT5 for most things, CT100 with standard TV connectors
for RF distribution and shielded 8-core alarm cable for comfort keypads and
door station. You can see a lot of detail on my progress at
http://www.solarfish.com/house
but so far I have successfully used CCTV,
home made IR TX/RX, phone and of course computers over my unshielded CAT5
with runs up to 50 meters (KAT5 will be next when my order is delivered).
Do
put in loads, I have a few locations that are already a little short on
CAT5
and some of them have 4 or 6 ports (mind you the situation will be relieved
a little when I start putting more than one thing down a single CAT5
cable).

Also, unless you enjoy making life difficult for yourself, start using some
sort of cable marking system on all cables from the first run (like the
coloured bands described on Mark and Keiths sites). It is essential when
runs start getting over about 10 and it is a real pain trying to mark
cables
up retrospectively.
