I have been trying to set up similar

i.e. my aim is dedicated mp3 file server, though for cost reasons it'll be a
general file server until I get richer :-)
with other PC's on LAN able to play from this server. I have not yet
deployed the rig yet but my experiments on 3 PC peer to peer
are all done.

I use a player/ripper called musicmatch jukebox. I think I got it from
MP3.com

The mp3 files are held on the server (obviously) which is called Wurlitzer
each client pc has to have the server drive mapped to it ( I map to drive M:
for music)
when the mapping is done a music library is created on the client, you can
choose all or some of the files you created.
assuming the server is 24/7 and you choose reconnect to mapped drive on boot
up for client, you've instant access to your music from any PC.

I haven't yet worked out what to do when files are added to the server, I
think each client library file will have to be updated.

down side of PCs playing music or DVD for that matter, is:
