Well a quick search on google shows that there are people doing this
with a baluns on either end. There is even a suggestion in one thread
of a company doing some suitable ones for a fiver, but I can't get
the website to load. URL is www.allthings.com.au but it appears to be
dead. Anyway the general consensus seems to be that a baluns capable
of transmitting video is more than capable of doing digital audio.
Try going to groups.google.com and search for 'digital audio over
cat5'.
