I just want distribute my 5.1 or 6.1 speaker connections as my amp
is one room and speakers in another. I would rather use a cat5 solution.

is there such a product ?

No, digital audio is not supported over KAT5. For 5.1 you would need
to either use 3 pairs of 'standard' KAT5 units or one standard pair
and one '4 way audio' pair.
