I know nothing about an XServe but have used Apple Servers before.
At the time even Apple admited they were a deaprtmental server
rather than a corporate solution.

The issue I would have is the number of support engineers available
for an Apple Xserver in comparison to Windows? If something does go
wrong you are going to be limited on support options with the Apple.

SBS doesn't play well with other because it is not supposed to, it
is designed as a one stop solution. Personally I'd go with two DL
360's or even Dell equivalent. Making both domain controllers for
the AD, one running file and print, the other running Exchange.

Of course without knowing the complete setup this may not be
appropriate. However, I would carefully consider the Apple route
over Windows.
