Confused with Video distribution

I have tried to work this out for myself reading previous threads
but just get myself more and more confused.

AIM:
Move the DVD, Video and Sky+ box into the garage and out of the
living room. Allow IR control between the rooms (will use Cortex
modules for Receiving and Sending). Feed the video signal back to
the living room to a wallplate and have a signal cable feed the TV.

In addition the main bedroom should also be fed with DVD, Video and
analogue TV stations. Plus be able to view the same Sky+ station as
is on the main TV.

So firstly what wall-plate and cabling should I wire between rooms
and garage, coaxial, S-Video, SCART? How do I present from wall-
plate to TV, co-axial, S-Video, SCART?

Can I switch video signals so for example DVD is going to bedroom
whilst Sky+ is going to lounge. Or Sky+ is going to both bedroom and
lounge?

I would like to scale in the future to kitchen, bedrooms 2 / 3 / 4.

Don't want to loose picture quality by using UHF.
