As others have mentioned, using 1-wire is good, using a usb adapter and
owfs is a simple way to do it, using cacti to collect and graph is
pretty easy too.

An alternative is one of the wireless weatherstations such as the WS8610

which can monitor up to 4 sensors and the logging can be downloaded to a
pc over usb.
