I will try and estimate this once I get home (December) but this will be
hardware only. There is still the assembly and testing to add and until I
start making the units this is hard to estimate. I know the from
experience there is one connector which takes 20 mins to solder on and
clean up.

Yep, just have to get the hardware as good as possible. Someone will think
of a use for it that we don't whilst designing.

I will work on an estimate at home in December. A discount here would be
appropriate as there is an element of faith plus paying before seeing.
I think the language of choice can be left up to you. My choice of VB6 is
mainly because it is simple to follow and use and I have the compiler etc.
This is not however a simple program to read and is Windows based. I think
I am using something like six 2, 3 and 4 dimensional arrays to keep track
of designing a screen and this is only a small part of the project. I am
up to nearly 6000 lines of code which is a little frightening.
I suspect there would need to be a GUI as folks would want a graphical
way of designing the screen. It may be possible to share my current VB
tool as I save all the setup data into an Access database. Entire menu
systems are stored this way with hundreds of screens (subject to memory).
For the most part I use byte arrays as the micro works in bytes and it
saves a lot of hassle later.
