You can get various pdf to txt converters or pdf to doc converters

Just Google it. If they are protected pdfs this will be more difficult if
not these utilities work very well

It's possible (although I don't know for sure) that some of the other
PDF readers (ie non-Adobe) don't support the security options; try
http://www.foxitsoftware.com/pdf/rd_intro.php
