Sadly it is not practical to change development environments now. I have
the development boards, in circuit debuggers, compilers etc. etc. which
have cost a fortune over the last couple of years not to mention actually
learning how to use these tools. Besides, I actually have the Ethernet
stuff mostly working now, just DHCP to write at some point.

It is looking like a really tasty bit of kit in my minds eye though. Just
got to make reality somewhere near my imagination.

The only other thing I could suggest is something like the Zilog Acclaim.
A
microcontroller with onboard ethernet for around $20 (for single units).
The develoment kit is $100.

Not wireless, but may make your board a bit simpler
