I have exactly this.

An MPEG2 capture card (hardware compression), and a bloody long cable.
I use S-Vid for the Video and 2 audio cables straight out the back.

Works a treat for 720x.. whatever it is, level recordings ... quality is
great.

recordings using a capture card in a PC and a suitable recording
application
(of which there are many free / low cost available)
