KAT5 doesn't encode the video to series of packets for onward network
transmission.
It simply uses the enhanced noise rejection capability that twisted pair
cable gives you, along with a balanced signal to allow a video signal to be
sent long distances without the introduction of unwanted interference.
Unless you are going to use wireless video sender thingies, a hardwired
cable is going to be your only other option - be it coax, svideo, VGA or
CAT5 cable.
