The church I go to use the iRiver iHP-120 to record services to MP3.
We spent some while looking at what was available and the iRiver
seemed to be the pick of the bunch - it records to MP3 or WAV, plays
back several more file formats including OGG, and has optical I/O as
well as the standard line in/out.

The quality of recordings seems quite good, but we are recording off
our PA system. I don't know how good the internal mic is.

One caveat is that the user interface is not very intuitive.
