I'd add more Cat5 while you're at it.  I only put in two, but I can already
see a need for 3 in a couple of rooms.

Run 4 Cat5 to each point.  You don't have to terminate them at wallplates -
just have them behind there ready in case you need them.  Cat5 cable is so
cheap the additional cost will be negligible.
