In fact there are a number of different designs for coffee machines,
of which percolation is only one. Percolators rely on the water being
recirculated through the coffee, whereas for the typical filter
machine the water on passes through the coffee once, at atmospheric
pressure.

Espresso and Moka machines force the water through the coffee at
pressures greater than atmospheric pressure. This has an impact on
both the flavour and caffeine content. (Espresso actually contains
less caffeine than a conventional mug of coffee, although few would
believe it).

The way in which the coffee beans are roasted and the way in which
they are ground can also have a profound effect on the coffee flavour.
