You need IP rated low voltage fittings in a bathroom. Information here:

Ceiling void for transformers is fine. The rule of thumb is that they
should be in an area of good air flow to ensure heat dispersement. Most
dimmer manufacturers supply their specs. Just don't cover the
transformer with insulation and try and keep it away from the fitting.
