You could run the serials over the cat5 into a dedicated small box with
multiple serials on it, or even a
proper terminal server (we use a Cisco 2511-RJ here in the office - may be
overkill for home)

On a linux box you can use software like http://www.conserver.com/ or
http://www.jfc.org.uk/software/conc.html
