Looks like you do take the LED voltage drop into account (from
http://misty.com/people/don/ledd.html) so it's:

R = (Vsupply - Vledvoltagedrop) / I

e.g. at 12v and 20mA LED with 3.4v drop ("bright white" LED)
R = (12 - 3.4) / 0.02 = 430 ohms

So, if you don't take the LED voltage drop into account you're LED will be
dimmer but safer.
