I'm just about to run a couple of serial lines over my installed Cat5e.
Anyone got any recommendations as to if I should use a twisted pair for
RX/TX/ground etc (does it make any difference?)

I would just try running it on Cat5
Do you know which pins you are using on the serial cable ??
If you don't want to solder 9 pin  RS sell some serial 9 pin > cat5
connector sockets ( if you se what I mean), you can chose which pin goes
to
which pin
Give me a shout if you cant find them
