Because the NICAM carrier and signal is not recorded with the video and
mono audio.#

Nope ... It's sent modulated onto a carrier offset by a frequency which
I cannot remember from the base UHF frequency of the channel.

NICAM VCRs do decode the NICAM audio and record it as a HiFi Stereo
(separate to the linear mono) track ... They pass that signal out as
stereo audio on phonos or SCART sockets - they do not remodulate as
NICAM as there are no decent cheap domestic NICAM encoders availsble.
