But, I
plan to put PIR high on the wall, above the doors.
And
all the Cat5 sockets are low, in the level of mains
sockets.
So it
would not be nice to plug cable in socket and pull it along the
wall
up to the PIR.

don't plan to move PIR's around.

I have an IR
receiver mounted inside a PIR sensor and sharing a single CAT5 cable.
It
was really easy to do and works well. I also have a PIR sensor and door
contact sharing a single CAT5 cable, again there are no
problems.
My approach was to put CAT5 terminated at sockets
throughout
the house and then plug anything and everything in to them. So
currently
I have LAN, home phone, business phone, PIR sensors, door contacts,
CCTV cameras, comfort keypads, IR receivers/emitters, KAT5
receivers/transmitters all plugged in to the same structured wiring
and all easily moved around the house. Back at node zero everything
terminates in a pair of 48 port patch pannels so again I can move
things around very easily.
Looking at you list I would probably
go
for 4 x CAT5, 1 x speaker wire, 1 x coax (I think that is what
microphones
use) at each doorway and that should work for everything mentionned.
Incidentally, CCTV and Comfort Keypads are supposed to require shielded
cable but both work fine for me with normal
CAT5e.
