Yeah,
I got past the "it works" moment, and looked to make the solution
more
robust.
With a decoupling cap in place, and a single cap added across the 5V
output,
I now have a healthy 4.99 which stays pretty darn stable, even when
sending
RS485 or burning EEPROM.
Again, thanks to all who helped, greatly appreciated.

Well done Frank !
However I would still strongly recommend solving your 4.75V output
problem otherwise I suspect you will have downstream problems at some
point.
