Drill a hole at the bottom of the bath, put in a small nipple to the
outside, seal it, but on some hose, attach to a pressure switch...feed
back that to HV or whatever.

Yup, but far harder and less reliable that a two-level pressure switch
which you use one switch for level and one for safety! ;)
