Forgive my complete lack of knowledge on this front.

What type of signal do standard CCTV cameras produce - is it S-Video.  If
so presumably all I need is a video capture card with an s-video input on
it and some software.  Is it really that easy?

Having trawled the archives I found these two snippets. I would expect the
capture card bit t  be out of date by now.
