I'd be grateful if someone could tell me the maximum
number of CAT5 cables that it's possible to terminate
on a single, or even double? faceplate?

I'd like to minimise the number of outlets/faceplates
but as it appears that Keith's KAT5 SCART system only
accommodates one "circuit" per faceplate I can see the
"headcount" rising.
