For smoke detectors use 18/4 unshielded, parallel, FPL cable. The stuff has
a red jacket and it's marked for use with power limiter fire alarm circuits.
Shielding is not only not needed. In some cases it's actually worse than
unshielded cable.
Window sensors only need 2 conductor but I prefer to run 22/4 solid cable
for them. The extra pair comes in handy if you accidentally cut or short a
pair with a staple. Motion detectors use the same cable. Alarm sensors, as
a general rule, do not use shielded cable. There are a few rare exceptions
but for what you're doing those won't apply.
