There are baluns available which can convert audio & video signals so
they can be carried over CAT5 wire.  The problem you'll have is
controlling the satellite receivers from remote rooms over CAT5.  Some
receivers use RF hand-held remotes but signal strength from the remote
may not be sufficient to control a receiver several rooms away.

If there's any way to retrofit the place with RG6 coaxial cable you'll
have more and better options.
