Help with wifi extenders

Hi All So following my previous posts where I'd discovered that my tp link
Ethernet over mains units were causing my issues with Sonos I went the
route of a ubiquity access point and three BT 1200 AC wifi extenders.
Needed the three as needed them for bridges for wired only kit such as
Xbox, sky etc
Lots of troubles as when they're on internet is incredibly slow and
unreliable. Turn them off and all is fine aside from the wired devices of
course who have no access without the extenders being on.
So I'm clearly missing something in terms of how to configure them albeit
config seems minimal.
Initially I'd assumed that they should have same network name as that
configured in the ubiquity. I know understand that I need a different name
for 5ghz network and can't rely on devices to just choose the best (happy
to be told I'm wrong on this)
Seems like there's confusion in terms of routing within the network but not
sure how to sort it out.
Am progressing towards the 'just run cables' approach albeit that's a
massive undertaking with the routings I have and it being a rented house.
Can anyone offer some general principles on how this should work or be
configured to solve this all?!
