If you are extending the sockets from a modern face plate when you
take the consumer bit off (bottom half of the front) there should be 4
punch down points, you want 2 & 5. Traditionally I believe you use the
blue pair but if going onto cat5 doesn't really matter as long as both are
the same throughout.
Did one this morning over a shorted distance and have done a few in the 10
-15m range.
You could try cutting an ethernet cable in half, punching down the ends and
still using your existing sockets, this should reduce the joints by a
couple.
Untwist as little cable as possible, and keep any PSUs or lights that use
transformers or CFLs as far from the cabling as is possible may help.
