So, from what I've read so far, it would appear that Handbrake seems
to be
the tool of choice for the task of re-encoding?
I've purchased an AppleTV to play with, I'm going to at least investigate
the option of re-encoding... I have no huge objection to it in principle -
so long as I can preserve the DD5.1 AC3 soundtrack, and maintain the same
video quality... If I can batch up the source DVD rips to re-encode
continuously for a week or two, then all the better... (I have multiple
PC's
I could dedicate to the task too)
So over the next couple of evenings I shall start experimenting... - anyone
have any recommendations for the optimum settings to use for the best
quality output?

I'm only going off what John said earlier and the fact that I've been
unsuccessful in my attempts so far. Of course in my case it could be that
the TV simply won't pass on the audio via its optical out. My surround amp
isn't HDMI enabled so I can't actually test it direct.
Since I do suffer from the odd stuttering of the video I may as well go
through forum thread and see if it resolves any on the issues.
