I am thinking about similar things at the moment.

Couple of things

I would not extend the cable. For me it is an extra joint that could go
wrong. I would always worry

I like the idea of patch panels at 2 different heights. One at the top and
one at the bottom then you can either patch different things into each (Top
= Ethernet and Bottom = IR) or just use the closest to patch each thing in.

As a side point - When we do this professionally in Datacentres the Cat5 or
Cat6 is cut to length with no real extra to play with. If well thought out
you should never need to move the patch panel. That said there is at least
one person on this list who has extended their Cat5 as house extensions
forced them to move the patch panel!
